PAPA CHEVO'S was founded by Eusebio Diaz and Manuela Diaz. They are couple from the state of San Luis Potosi, Mexico.

Eusebio came to this country to work on the agricultural fields of Salinas. After working for several years picking vegetables he became a truck driver.

They always had the vision of oppening a restaurant. For many years they struggled to accomplish their goal, but their hard work finally piad off. In 1996 their goal was accomplished when they oppened their first restaurant.

Their dedication has made PAPA CHEVO'S a popular place in the Monterey Penninsula. Every year people from differents states come seeking the little restaurant as recommended by their relatives or friends.
